As you can tell, I just love cooking Turkey!
Here is the bird prep:
Take giblets out of turkey, rinse cavity. Scatter a tablespoon of salt around the cavity and stuff with quartered apple, lemon, pear, a whole head of garlic, and a handful of celery tops. Garlic salt and pepper the outside of the turkey. Place on a rack in a deep (at least 4”) pan. Add 1 and ½ inches of water to the pan.
Place in a preheated 475 degree oven for 20 minutes. Lay a piece of tin foil on the bird to keep it from getting too brown, turn oven down to 325 and cook 20 minutes per pound. Check for it being done and cook longer if necessary. Turkey can stand covered up to an hour and still be hot!
